ORIGIN: Cienfuegos is a barrel-fermented white made with a blend of varieties that makes it unique (50% Albarin Blanco, 25% Verdejo, 25% Godello), with a fruity character, floral notes, complex, fresh and with great aging capacity. The philosophy that has always inspired the Cienfuegos project is to make different wines, without the limitations that in some cases constrain the wines in the appellations, giving more importance to the quality and uniqueness of the vineyards than to their location. Exploring territories of minority or forgotten varieties.

VITICULTURE: The vineyards scattered around ​​the Duero River and its tributaries share soils with similar characteristics formed by silty sands in the most superficial stratum and clay in depth, which limit the vigor and production of the plants. The continental climate in which the Cienfuegos vines grow gives the grapes a balance between sugar and acidity and an excellent concentration of aromas.

WINEMAKING: The harvest is done by hand in the last week of September. Once in the winery, the grapes are selected and subsequently destemmed and macerated slightly before being pressed slowly and gently, separating the yolk wine from the second qualities that are discarded. Fermentation and aging on lees take place in French oak barrels of about 225 liters, remaining in them for about nine months until bottling.

TASTING NOTES: Creamy and mouth-coating, this white wine from Selección César Muñoz balances excellently the fruit and the oak. Great acidity and long finish with white fruit underpinned by a dim mineral layer. A surprising blend -and a highly successful one at that. Cienfuegos 2022 is rich and full of nuance.

RECOMMENDED SERVING: Pairs well with fish-based dishes such as oven-baked sea bass, red tuna tataki.
