ORIGIN: This is a very special limited-edition wine made from Verdejo grapes sourced from Pago Saltamontes, a pre-phylloxera estate covering 2.27 hectares, with its first documented record dating back to 1863, although it is believed to be even older. The soil consists of sand and pebbles with a depth of eight meters and a layer of clay and limestone in the subsoil, characteristics that favor the natural drainage of the vines.

VITICULTURE: The vines are grown in goblet (bush) training system, and their yield is reduced due to their age. The berries are very small but of high quality.

VINIFICATION: The harvest is carried out by hand at the optimal moment of ripeness. Although this system involves intensive labor, it is worth it for the high quality of the wines obtained. The winemaking process aims to extract all its potential, particularly the fruity flavors typical of the variety, followed by a short maceration process to enhance its aromas and freshness. Finally, it undergoes aging on its fine lees for several months before bottling.

TASTING NOTES: Aging on lees contributes to our wine an unusually creamy texture and a soft mouthfeel. Its aroma evokes candied orange peel, bread dough, with hints of fennel and aromatic herbs. It's extremely smooth and creamy on the palate, with moderate acidity and a long, pleasant finish.
